Drink the Sugar Cane Spirit in Paraguay

La Caña is a traditional drink in Paraguay, obtained through fermenting and distilling the sugar cane honey (takuare’ê eira in the Guaraní language). For travellers who want to know about rum making in Paraguay, the best place to visit is Piribebuy.

While ”la caña” in Paraguay is technically rum, our methodology is unique to others. Such uniqueness comes from the times of the Spanish colonization when there weren’t any mechanized means to transport sugar cane until the distilleries, so the farmers used crush the sugar cane, boil the juice and condensate into a ”sugar cane honey”, known as ”miel de caña” or ”miel negra”. The sugar cane honey goes to the evaporation process, when is put into low heat vessels until turning to a caramel, and ensures the sugar cane flavour.

The sugar cane honey is diluted and fermented in bigger fermenter tanks at the distillery. After fermentation, the sugar cane wine that is known as ”guarapo” is distilled in copper columns where the alcohol is separated until produce a strong cane spirit known as ”caña blanca” that may have up to 70% of alcohol. Then the spirit is processed with treated water and aged in Incienso Marrón wood finished in French Oak. The woods give to the ”caña” its fragrance and colour. Similarly to whiskeys and other distilled drinks, the ”caña” gets better the older it becomes.

This is the route we take to produce every bottle of premium dark El Supremo Rum. All natural, static aged and agricole-style.

Is Rum the Next Big Thing?

Rum has been going to be the ‘next big thing’ for the last few years, and has already overtaken the gin market. Gin is now totally saturated with so many new start distilleries.

So is 2023 the year for Rum to take off?

For gin you buy rectified spirit and add peels, barks, seeds, spices, fruits, flowers and hey presto!

Rum is not as easy to produce as gin; you must ferment the sugarcane honey before distillation. And it takes even longer to produce aged dark rums.

Nevertheless, Dark Rum is a fascinating category with all the credentials of rare and collectable Scotch: It’s a dark, complex and lustrous spirit. It has age statements, rarity, the benefit of provenance, strong people stories, and interesting expressions.

The global market is around 150m nine-litre cases and slowly rising.

But the premium rum category is growing at more than 24% CAGR! This category is gaining ground due to the rapid premiumization by dark rum distillers. Separating the premium from the run-of-the-mill by aging, using different woods in aging, limited editions bottles as well as higher ABV expressions.

Aficionados will make a distinction between the English style from Jamaica, Barbados and St Lucia, Ron from Spanish speaking Puerto Rico and Cuba made from molasses (sugarcane byproduct), and Rhum in the French agricole style and usually made from sugar cane juice from Guadeloupe, Martinique and PARAGUAY.

Natural, Aged, Agricole

RUM is always made from Molasses (an industrial by product of sugar production) while Rhum Agricole is made DIRECTLY from freshly pressed sugarcane juice. Rhum Agricole can be made only when the sugarcane is at its peak of maturity, limiting production to a short season of approximately three months – from early March in southern Martinique  through late May in northern Martinique. Upon harvest, the sugarcane is immediately pressed to extract the free run juice, which naturally ferments with organic yeast. The careful production process of Rhum Agricole results in a pure spirit, encompassing the natural aromas and earthy, vegetal character of the sugarcane.

“The difference between Rhum Agricole and other rums has been compared to the difference between American Whiskey and Single Malt,” says Benjamin Melin Jones, Managing Director of Rhum Clement. The bulbous aromas and classic cane flavors in Rhum Agricole are captured in the long fermentation process and a lower distilling ABV. This makes for a sharp contrast with molasses based rums. At the height of the great sugar crisis, sugar production came to a halt and the molasses, from which rum was distilled, was no longer available. Rum making was analyzed and mimicked the French distillers of great Armagnacs to perfect his method of rum production known today as Rhum Agricole. Sugarcane was treated like a fruit and pressed like grapes to extract their fresh natural juice and fermented. The complexities and nuances of Rhum Agricole are now being re-discovered by a new generation of rum connoisseurs. The unique flavor profile of Rhum Agricole makes way for the creation of stellar and memorable rum cocktails, capturing the attention of the growing mixology community and cocktail aficionados. The aged varieties are comparable to fine small batch Bourbons Single Malts and Cognacs; and are becoming increasingly recognized as smooth and stellar sipping spirits like El Supremo Rum 8yo and 12yo.

IGUAZÚ
Great Water

The name Iguazú can be traced back to the native Guarani words “y” and “ûasú”, meaning “great water”. And for good reason. The Iguazú Falls is currently the largest waterfall system in the world. Its sheer expanse is a sight to behold, dwarfing other famed waterfalls like Victoria and Niagara.

According to local folklore, the serpent deity planned to marry a beautiful woman named Naipí, who fled with her mortal lover Tarobá in a canoe. In a rage, the deity sliced the river, creating the waterfalls and condemning the lovers to an internal fall.

In modern times, most of the river’s course runs through modern day Brazil, while most of the falls can be found in Argentina. In millennia past, Iguazú was once the life force of the native Guarani peoples, nourishing the surrounding lands and opening natural trade routes, enabling for ideas to be exchanged and civilization to thrive. It was against the backdrop of the Iguazú waterfalls that the Guarani were able to harvest the freshest caña and share their rum-making secrets with their Jesuit counterparts.
