The manufacturing of spirits in Paraguay goes hand in hand with the introduction of the sugar cane to the region at the time of the Spanish colonization. The fertile soil of Paraguay produces the best organic sugarcane in the world which is patiently hand cut, harvested and then loaded onto carts pulled by oxen before being transported to the mill where it is crushed to obtain the must and syrup . These wooden carts or Paraguayan Carreta or Karreta in the local Guarani language are the same type of transportation that have been used for the past four hundred years.
After extracting the sugarcane juice, it is then boiled in large open vats above open fires for nine hours to obtain the must and honey, before it is further fermented for three days and ready for the distillation process. The slow distillation of the fermented syrup in still columns produces the famous “Cana Paraguaya”. The purest mineral water from the Guarani Aquifer is then added before the aging process takes place firstly in the local incienso marron barrels and then finished in barrels of French oak. This patient process amongst timbers is what helps ensure the body, bouquet and flavour of El Supremo Rum.
The local incienso marron wood is unique to Paraguay and is what imparts both a special flavour and colour to our rum. After a few years, the aged rum is transferred from the Incienso barrels to French Oak barrels for its long term and final maturation. The result is a smooth, amber coloured rum with perfectly balanced aromas, similar to premium brandies.
